Jamaican Coconut Lentil Stew

2 tablespoons olive oil
2 teaspoon ground coriander
3 dice sized ginger pieces, grated
1-2 teaspoon ground cumin
1 can of coconut milk
1 cup of red lentils
1 small sweet potato
fresh pumpkin or butternut squash
pepper to taste
